A TEQUILA THAT TASTES TO THE LAND WE WORK

Many of our fields are located in Los Altos de Jalisco, mostly in Arandas. Our characteristic red soil is rich in calcium, manganese, potassium and iron, forms the plateaus, plains and elevations ornamented by the blue of the agave.

JIMA

We supervise our agave fields prior to the jima for its authorization as long as it complies with the maturity and content of ART (Total Reducing Sugars). Once the agave is ready it´s time to start harvesting, we cut off the leaves (pencas) to reveal the heart of the agave.

COOKING

Agave are stacked inside our brick oven and are cooked with steam. This process takes 23 hours of cooking and 23 hours of rest to obtain the best characteristics of our agave. The heat slowly transforms the agave’s natural inulin and starches into fermentable sugars. This slow baking process adds darker and bitter flavors to the juice, helping to retain more of the natural agave flavors.

CRUSHING

Through our five step station roller mill we crush the agaves and extract the juices from the fibers in a single line process.

FERMENTATION

We use our own yeast to carry out the fermentation that takes place in an average of 72 hours where we transform the sugars into Alcohol.

DISTILATION

After fermentation, we send the mosto to our stills where the first distillation produces a liquid called the ordinario and this will be sent to our second distillation that will help us obtain our Tequila Blanco, which is then ready to be aged and bottled.

AGING

We use Virgin American White Oak Barrels to carry out the maturation of our Reposados, Añejos and Extra Añejos.
